This hon-mirin is meticulously crafted by the sake brewery, starting with carefully selected ingredients. All the rice used, including the brewery's own koji rice, is sourced exclusively from Niigata Prefecture. By employing authentic rice shochu distilled in-house, the mixture undergoes a slow saccharification process over three months, followed by a three-year aging period. This results in a deep, mellow richness and a refined sweetness from the rice and rice koji that beautifully accentuates the natural flavors of your ingredients.
